Christmas Custard

Now that the Christmas season is here, it’s time for all the festivities of the holiday season, and that includes delicious desserts! But besides sugar cookies, what festive treats are there to make? Well, a Christmas custard is the perfect option! Taken straight from my grandmother’s kitchen, here’s how to make a perfect custard for friends and family out of only five ingredients. 

Ingredients:

  • 2 cups milk
  • 2 eggs
  • ½ cup sugar
  • 1 tablespoon flour
  • ½ teaspoon vanilla

Instructions:

  • Get out a pan and a double-boiler if you have one. If you don’t have a double-boiler, that’s fine, you just have to make sure you don’t burn the milk.
  • Pour in the milk on medium heat and stir constantly. Scald the milk (see notes below for directions on how to scald milk). 
  • In a bowl, mix sugar and flour together. Lay aside.
  • Beat eggs in a separate bowl and then add the sugar and flour mixture.
  • Pour the egg, sugar, and flour mixture into the scalded milk and stir carefully. Let the mixture thicken but not boil. Once thickened, stir in vanilla. Remove heat and stir once or twice to release steam.
  • Cool well in the refrigerator. Add toppings if desired.
  • Recipe serving size is two. 

Notes:

  • In recipes, scalding milk is used for infusing flavor and helping bread dough rise properly in different bread or custard recipes. To scald the milk, stir constantly on medium heat ensuring none of the milk burns. You’ll notice the scalding happens when tiny little bubbles form on the outside of the pan. If larger bubbles start to appear or the whole mixture starts to boil, unfortunately you’ll have to start over. So remember to be patient and observant while doing this step!
