Thanksgiving Quesadilla

Now that Thanksgiving is over, what do you do with the containers full of turkey and other delicious leftovers from Thanksgiving? A quesadilla filled with turkey, cranberry sauce, cheese, and jalapeños is the perfect option! This recipe is fantastic for a delicious lunch or dinner, and it takes less than 10 minutes! 

Ingredients – 

  • 2 tortillas (flour or wheat)
  • ½ cup shredded Cheddar cheese
  • ¼ pound shredded cooked turkey meat
  • 2 tablespoons cranberry sauce
  • ½ jalapeño pepper, seeded and minced 
  • 1 green onion, sliced
  • 2 tablespoons chopped fresh cilantro

Instructions – 

  • Heat a skillet over medium heat. Place 1 tortilla in the skillet and top with ½ of the cheddar cheese, turkey, cranberry sauce, jalapeño pepper (or any other vegetables you prefer), green onion, and remaining cheese. Place the other tortilla over the top. 
  •  Cook until the tortilla is golden brown and/or cheese is melted.
  • Serve immediately and enjoy!
