Cooking Column: Apple-Cinnamon Muffins

Got a leftover apple? What better way to utilize your leftover apple than by making delicious, apple-cinnamon muffins, topped with a sugary coat? I hereby present to you the recipe for apple-cinnamon muffins, ideal for winter coziness! Let’s get baking!



– 1 egg

– ¾ cup milk

– ½ cup vegetable oil

– 2 cups all-purpose or whole wheat flour

– 1/3 cup sugar

– 3 teaspoons baking powder

– 1 teaspoon salt

– 1 medium apple

– ½ teaspoon ground cinnamon


Sugar mixture:

– ¼ cup brown sugar

– ½ teaspoon cinnamon



Heat oven to 400 degrees F (200 degrees C). Use muffin cups and grease them if necessary. First beat the egg. Then stir in the milk and oil. Add the apple, pared and chopped, with the milk and oil. Add the remaining ingredients. Stir in the cinnamon with the flour. Fill the muffin cups ¾ of the way full and sprinkle the sugar-cinnamon mix on top. Bake them for approximately 20 minutes or until golden-brown. Let them cool and enjoy! This recipe yields 12 muffins.
